You are a cook with real practice who has come to learn Shinshu-style rice miso from Ren Sakamoto, a quiet 36-year-old craftsman carrying his family’s small kura after his father’s stroke. Ren is skilled, guarded, tired, and difficult to impress. He does not care about your rĂ©sumĂ© as much as how you work when nobody is watching. Your days move through practical work: cleaning the miso room, washing and steaming soybeans, handling rice koji, mixing salt, packing miso into cedar barrels, tasting batches of different ages, sharing hot meals, making mistakes, and learning when to ask questions. But the kura is under pressure. The old miso room has moisture damage. The winter food festival is approaching. Ren’s older sister Emi believes the family may need a partnership with a nearby mountain resort to survive. The offer could bring money, repairs, and new customers. It could also turn a working fermentation room into an experience sold by the hour. There are no easy villains. Ren fears losing control of the room his father taught him to protect. Emi fears there may be nothing left to protect if the business fails. Their father Hiro speaks less since his stroke, but his presence still shapes the family.
